Sasquatch Potato Salad

Darling Foods is excited to dress up some traditional recipes with some extra flair. Sasquatch Mustard is the perfect addition to Homemade Potato Salad because its intense flavor offers the additional zing this dish needs. Making your own potato salad is always impressive. As simple as it seems to make, it can often come out too mushy or under seasoned. We love this recipe because it is incredibly low in fat and heart healthy, but still brings it with flavor.  If you’re looking for a recipe that will impress both your guests and their taste buds, try the one made with Sasquatch!

Dressing:

1/2 Cup Sasquatch Mustard® (any variety!)

1/4 Cup Mayonnaise

1/4 Cup Crema Mexicana

 

Ingredients:

8 Small Yukon Gold Potatoes

6 Small Red Potatoes

Ice Bath

3 Hard Boiled Eggs Chopped

1 Tablespoon Salt

1 Tablespoon Italian Herb Seasoning

1 Oregano Sprig Chopped

1 Rosemary Sprig Chopped

Handful Chives Chopped

1/4 Cup Shallots Chopped (pre-pickled optional)

1/4 Cup Pickles Chopped

 

Instructions:

Simmer the potatoes in heavily salted water until they can be pierced by a fork, but are still firm. Remove from water and immediately immerse in an ice bath.

If you like the skins removed, use a towel to remove them at this point.

Chop the potatoes into bite sized pieces.

Mix the dressing ingredients together.

Mix and chop the herbs and salt. Feel free to use your own poetic license here. We garnished with chives, but dill is awesome here too.

Combine all ingredients, put in a pretty bowl, garnish with paprika or anything else that makes you feel fancy and get out a fork!
